CAFÉ
CALETA
Ingredients
1 lemon
50 grams cafes Ibiza coffee beans
2 cups brandy
I cinnamon stick
2 spoons sugar
Preparation: put an earthenware pot on the stove with the brandy, lemon
peel, cinnamon stick, and the coffee beans. Light the brandy, add the
sugar and slowly stir until the alcohol evaporates. Serve hot in a glass
garnished with the lemon peel
Café Madame
Ingredients:
100 grams whipped cream
4 teaspoons sugar
4 teaspoons Mari Brizard liqueur
Preparation:
Make a strong coffee. Divide it into 4 cups. Spread the whipped cream
on top. Sprinkle the sugar and pour the Mari Brizard over it.
TURKISH COFFEE
TURKISH COFFEE
Ingredients:
Cardamom (chopped)
2 cups water
2 teaspoons sugar
2 teaspoons ground cafes Ibiza coffee
In a pot on a low fire, boil the water and cardamom. Add the espresso
coffee
And return to a boil on low fire. Let it sit so the grounds sink to the
bottom. Boil a third time until it settles. Pour the coffee in small cups
leaving the dregs at the bottom of the cup.
VENECIAN COFFEE
Ingredients:
4 egg yolks
4 spoons sugar
4 teaspoons grappa
4 spoons ground cafes Ibiza gran selection
Preparation:
Separate the egg whites and yolks and beat the yolks with the sugar. Add
the liqueur and 4 cups of gran selection Ibiza coffee and mix well. Heat
in a double boiler until a fine creamy froth is obtained. Serve very hot
in 4 cups.
THREE LIQUER
COFFEE
Ingredients:
1-glass Baileys
1 glass Kalhza
1 glass amaretto
4 cups cafes Ibiza coffee
3 teaspoons whipped cream
A pinch of cinnamon powder
I chocolate bar
2 cinnamon sticks
Preparation: mix the three liqueurs with the freshly made coffee and serve
in cappuccino glasses. Cover with the whipped cream and sprinkle with
the cinnamon and chocolate. Serve hot with a cinnamon stick in each glass.
ROAST CHICKEN BREASTS
IN GREEN COFFEE SAUCE
(4 persons)
Ingredients:
4 chicken breasts
1 dl broth
40 grams cafes Ibiza
1 spoon sugar
1 dl. Fresh cream
1 cinnamon stick
1 small spoon pine kernels
8 fried radish leaves
12 slices potato
1 spoon fried tomato
Preparation: roast the chicken breasts for 20 min. in another pot heat
the sugar slowly until it turns to caramel, add the coffee, the cinnamon
and the previously toasted pine kernels, whip the cream and bind the sauce
with a whip away from the heat. Season to taste
VEAL CARRILLERA WITH COFFEE AROMA (6 servings)
Ingredients
3 onions, 1 green pepper, I red pepper2 leeks, 2 carrots, 2 cloves of
garlic, bay leaf, thyme, black pepper grains
1 hambone, 4 veal jaws
½ liter red wine and I shot brandy. ½ liter consumé
and concentrated café Ibiza
Preparation: chop and lightly fry the vegetables, flour the veal and fry
it in strong oil on both sides. Mix the vegetables and veal, flambé
with the brandy and douse with the wine. When it settles, add the consume
and simmer slowly for 1 hour. Remove the veal and pass the sauce through
a blender adding the wine and the coffee letting it boil 10 min. skim
off the foam, add salt and pepper to taste.
COFFEE DELIGHT WITH
BANANNA ICECREAM
(6 persons)
Ingredients
125 gm. Condensed milk
100g. Cafes Ibiza
˝ Liter triple sec
6 soupspoons sugar
6 teaspoons flour
6 molds
½ banana ice cream
Preparation: cook the condensed milk in the can30 min. let cool. Separate
and whip the egg whites. Add flour, sugar, the yolks, 6 teaspoons condensed
milk, and the coffee and bake 10 minutes. Serve with the ice cream.
BRED BREAM in curl
paper with vinegar truffles and coffee
(6 persons)
Ingredients:
3 I kilo red bream fish
1.5 dl virgin olive oil
2 boiled egg yolks
1-teaspoon sherry vinegar
150 Grams peeled and chopped tomato
60 gram. Chopped truffles
I cup Ibiza coffee room temp.
30 gram. Butter
3 leafs of curl paper
Salt and white pepper
Preparation: fillet the fish and season it with salt and pepper. Place
the fillets on the plate with the butter. Close the paper and bake in
the oven 12 minutes. Serve on a plate accompanied with the vinaigrette
made from the truffles and coffee. To make the vinaigrette, crush the
egg yolks and mix them with the tomato, the truffles, the vinegar, the
oil, the coffee, and season
COFFEE COOKIES
Ingredients:
250 grams sifted flour
100 grams butter
100 grams brown sugar.
2 teaspoons finely ground coffee
1 egg
Preparation:
Melt the butter and beat with the sugar. Then mix the flour with the coffee
and add the egg. Knead and spread making a layer 1 cm. Thick. Cut the
cookies to desired form and place on a greased tin. Bake in medium oven
until golden. Remove and let cool
